Patty’s Black Bean Salad – An Extra Treat
- 3 cans of Black Beans
- 2 yellow peppers
- 1 cup finely chopped scallions
- 1 cup coarsely chopped cilantro
- ¼-cup coarsely chopped parsley
- 4 beefsteak tomatoes diced & drained of juice
- 2 cups peeled diced jicama
- 1 can of corn
Dressing:
- 2 Tbls. Dijon Mustard
- ¼-cup fresh limejuice
- ¼-cup olive oil
- Salt & pepper
- A dash of cumin
- A dash of cayenne pepper
Combine Dressing in small bowl. Put beans, pepper & scallions in large skillet & set over medium heat. Stir in the dressing & mix well to coat the beans. Cook until the beans are warmed about 3-4 minutes, stirring frequently. Remove from heat & add remaining ingredients. You may serve it immediately or refrigerate, let flavors meld & serve the next day. This is lovely with beef or chicken or simply by alone. High in protein, low in fat, inexpensive, simple & delicious!!
