The Summer Salmon Salad
- 1 fillet wild salmon (bought fresh)
- ½ cup low sodium soy sauce
- 1/3 cup brown sugar
- 2-3 cups baby mixed greens
- 1 cup mandarin oranges
- 1 cup pineapple walnuts
- ½ cup candied walnuts
- ½ cup coconut
Dressing
- ½ cup orange juice (no pulp)
- 1/3 cup apple cider vinegar
- ¼ brown sugar (again)
Marinate the salmon in the soy sauce and brown sugar and sauté on stove top or grill on the barbeque.
Lightly toast walnuts and coconut until light brown on top layer in a pan. Chop salmon and toss together with the walnuts, coconut, mixed greens, oranges and pineapple. Add in dressing and dig in for great summer fun.
